Kristi: Eating Vegetarian is so much easier than we all believe. I make vegetarian recipes several times a week and sometimes everyday. That’s not to say I am a total vegetarian, I do eat grass fed beef and fish, chicken and turkey. There are so many health benefits to adding a veggie meal to your plan. At our restaurant we did #MeatlessMonday offering all types of good veggie menu items. Roasted tomato feta spinach pizza anyone?
Miriam:I always loved your pizzas and you would always top them with a big Organic Salad that was the best ever. I am a big follower of the Blood Type Diet and for me being an O I eat grass fed beef several times a week. I also incorporate the Mediterranean Diet into my meal plans. Adding lots of veggies is so great for your blood pressure, digestion and blood sugar as well.
Kristi: Yes my Mom and I follow a morning regime of a green drink before we start the day to add lots of fiber and antioxidants to our diets, kind of like a protective armor for the day. I found a great article of the health benefits of the fiber that is in vegetarian diets and thought you might enjoy the read. It’s a very well researched and in depth article on all the health benefits of vegetarianism.
“Compared with meat eaters, vegetarians tend to consume less saturated fat and cholesterol and more vitamins C and E, dietary fiber, folic acid, potassium, magnesium, and phytochemicals (plant chemicals), such as carotenoids and flavonoids. Miriam: Food is so powerful, either for good or bad. Food is like the Ultimate Super Hero! Kristi when you were able to so radically change your health through diet you ended up being a walking testimony.
Kristi: Yes, years ago, in college I lost about 25 pounds becoming a vegetarian but never kept it off, of course once I was on my own and doing the college thing. My vegetarianism turned into cheese pizza, french fries and honey buns!
Miriam: Yes, not really a healthy regime. Tell me about the green drink you and your Mom drink. That’s a great way to get fiber in your diet early in the day and also alkaline your system for the day to come.
Kristi: Absolutely. It is a great way to start your day with a pow! So fast and easy too. The blender is the real secret here. This recipe is a powerful protector against inflammation and awesome to get your metabolism revved for the day.
Simple Vegetarian Recipe for Morning Green Drink
1/2 Organic Apple (Gala is my favorite)
1/2 inch ginger chopped
4 finger pinch of Cilantro
1 slice of Lemon
1 16oz bottle water
A.) Add the Cilantro at the bottom of blender then the apple then the Lemon and the ginger goes on top then water.
B.) Add an ice cube to help it blend better and blend till liquefied.
C.) Optional you can add 1 tsp of the Lime Canary Island Garlic Herb Olive Oil or the Hot Canary Island Garlic Herb Olive Oil. When you blend it the Olive Oil will emulsify throughout the drink. Adding the Olive Oil will add flavor but will also add Omega-3 which is great for your heart and brain but also helps it digest slower which is another perk for your blood sugar.
#Healthtip of the day: If you want it even lower in the glycemic index, use a green apple instead of the Gala or Fuji as the green apple’s Glycemic Index is lower, which means that the sugar is lower, which is good now matter how ya peel it!
Drink up! It’s not so bad when you know how good it is! It tastes delightfully lemony and as my Mom says, “That’s not unpleasant at all.”
