Miriam Vigoa FREEEZING at a Show

Okay Okay so we don’t actually have snow days here in Florida, BUT when you have to wear three sweatshirts, two jogging suit jackets and long socks and boots, gloves and a neck warmer and hat, well that’s enough for us! No we don’t have to shovel the driveway to get the car out but the dogs insist on wearing three sweaters and a cape before they will begrudgingly go outside to tinkle   Well while Miriam is at a show in Nokomis Park this weekend I thought I would share a Snow Day Soup recipe with you.

You better believe when it gets cold in Winter Haven, all our customers come into Cafe Latte and expect soup, well actually they darn near pitch a fit if we don’t have it (you  know who you are;)  So here is a quick easy recipe for a delish soup that is low sodium and savoury ta boot. No it’s not actually our recipe for the soup (we are saving that for the cookbook) but it is one that I have made many times over using the Canary Island Garlic and Herb Olive Oil.  Here goes:

Snow Day Soup in Florida

Chicken Vegetable Soup with Splash Bread

2 chicken breast cut into cubes (easier to cut if partially frozen)                           

3 stalks of celery cut into thin slivers

3 carrots cut length wise and roughly chopped

1 small can of green chiles ( these add nice spice without a lot of heat but good flavor)

2 red peppers deseeded and diced (remember, bell pepper seeds are never a garnish, so clean them up good)

2 potatoes peeled and cut into cubes

1 whole sweet onion diced

3 Roma tomatoes diced

4 or 5 stalks of asparagus or 1 cup or green beans( whatever is handy)

4 cloves of garlic smashed

4 tablespoons of Canary Island Garlic and Herb Olive Oil Lime Splash

1.)Add chicken to pot  and top with Lime splash, add all other ingredients on top

2.) Add enough water to make it 2 inches from top of pot. Bring to a boil then lower to simmer

3.) Should be totally done in about 30 minutes after you turn the burner off add cut up raw baby spinach or kale and put a lid on to steam the greens.

Serve over brown rice or quinoa and serve with Splash Bread (drizzle Lime Splash over bread and broil till aromatic and brown)

Happy New Year!!!!

I hope your New Year has started off with a Delicious Bang! or SPLASH!!!  We have a lot of people for the New Year have started going to Weight Watchers and they Love to eat at Cafe Latte.  If you’re not familiar, Cafe Latte Coffee House and Eatery is our Cafe in Winter Haven, Florida.  Cafe Latte is where the Canary Island Garlic and Herb Olive Oil  “The Splash” was re born.

Almost 16 years ago Miriam Vigoa and I, Kristi Linebaugh, opened a small 4 cup coffee house in Winter Haven Florida. To make a long story short.  I served only desserts and bagels and in three years time I gained 65 pounds!!!! Yep you heard it 65 pounds.  Guess who was nibbling on the pastries? :0   Well Miriam kept suggesting we serve healthy food but since I didn’t know how to cook, that put a road block up.  It was not until Dr. John Coleman continually asked for me to cook him lunch that I  finally mentioned it to Miriam and she offered to make the Splash, a family recipe for seasoned olive oil.  She told me, ” Just put a Splash on everything you make, and everyone will think you can cook!”  Well 16 years later and 13 People’s Choice Awards later, we are Splashin up a Storm at Cafe Latte.

Now that Weight Watchers has implemented olive oil in their lifestyle planner. All of my customers that do Weight Watchers are thrilled that they can eat at Cafe Latte and get in the good olive oil and extra delish flavor as well.  The Canary Island Garlic and Herb Olive oil has all the garlic and herbs and spices already in the oil so you don’t have to do a thing, but Shake it up and Splash it on!
